Veggie Chili


Ingredients:

2 tbs Olive Oil

2 lbs of Tempeh

1 medium yellow onion, diced

1 Bell Pepper, chopped

1 (3 oz) package of Sportsman’s Chili Mix

1-2 cans pinto beans, drained

1 can of corn

1 can tomato sauce

2 cans diced Fire Roasted Tomatoes

Chopped cilantro or parsley


Steps:

  1. Heat olive oil in pot or pan

  2. Brown tempeh and lightly season with 1-2 tbsp Sportsman's Chili Mix (3-5 minutes)

  3. Sautee onions and bell pepper (3-5 mins)

  4. Add all ingredients and remaining Sportsman’s Chili Mix to Large pot

  5. Bring to boil and let simmer for 30 mins

  6. Enjoy!
